Za’atar is a Middle Eastern seed, herb and spice blend. We use it as a seasoning for chicken and eggplant roasted together on the same baking sheet. Surrounded by the chicken and eggplant, garlic cloves at the center of the baking sheet become soft and creamy. To finish the dish, we create a flavorful sauce by mashing the cloves then deglazing the pan with water and lemon juice.

Delicious
No eggplant or garlic, just chicken and red onion. Easy and yummy.

Made using four chicken legs (about 4.5 lbs) and good quality za'atar. Cooked for 40 minutes. Salt & za'atar were overpowering. Will try again with about 25% less of each. Will also try w/o the sugar. Don't see why it's needed.

I made it tonight. It was very good. My family loved it. The chicken skin was crispy and the flavor was amazing.

Not a great dish, imo, but very little prep and good enough that I would make it again.

I don’t usually gush over recipes, but this dish is really easy, and very good. Cooked for 35 minutes. BTW, I think the garlic sauce made the dish.

This is a great weeknight recipe! It only takes minutes to throw together and we thought it tasted great. I used thighs and the chicken was crispy with great seasoning. I haven't made a lot of eggplant in my days but thought this was very flavorful.
