In this version of nohut piyazi, or Turkish chickpea salad, we use umami-rich sun-dried tomatoes instead of fresh tomatoes. Their intense flavor, along with sliced red onion, lemon juice and fresh herbs, adds contrast to the backdrop of earthy chickpeas. Aleppo pepper is a coarsely ground red pepper with mild heat and notes of dried fruit and cumin; tangy, fruity, brick-red ground sumac is made from the dried berries of the sumac bush. Both are commonly used in Turkish cooking and are sold in spice shops and most well-stocked supermarkets. If Aleppo pepper isn’t available, substitute with ¾ teaspoon sweet paprika plus ¼ teaspoon cayenne pepper and garnish with additional paprika; simply omit the sumac if you cannot find it. This salad is great served as a side to grilled meats, seafood or kebabs, or offer it as a light main course, with warmed flatbread alongside.

Tip

Don’t skip the step of heating the chickpeas and seasonings in the microwave and allowing them to cool before completing the salad. The chickpeas expand when warmed; as they cool, they absorb the seasonings so that each bite is flavorful.

Yum!
This is wonderful! I omitted the sumac (couldn’t find it locally), but I used additional Aleppo pepper and paprika. It turned out really well and was even better the next day—I actually preferred it chilled. This is definitely going to be in my rotation, especially on hot days when I don’t want to heat up the kitchen.

Delish
I have a feeling it will be even better tomorrow. I added toasted pine nuts and some Israeli cous cous. Next time I’d do more lemon and sun dried tomato. Def a keeper recipe.

Outstanding recipe for our west coast heat spell!
We just suffered an awful heat spell here in the Bay Area. High 90s and most of us don't have air conditioning because we hardly ever need it. Aside from a couple of minutes in the microwave, there's no heating this up. It was very tasty, filling but not heavy. I used fresh cherry tomatoes because I had them and didn't have the band width to go out and get sundried ones. Dear hubby loved it and wanted to make another batch right away!

Fabulous!
Made this today for a lunch with friends, and everyone loved it even though I didn't have the full amount of basil. (My basil plant didn't have quite enough for 1/3 of a cup.) Definitely going on the rotation this summer!

Not your boring old bean salad.
Super easy and tasty. I made the recipe exactly as written, and it's definitely a lunch salad I will put into rotation. The chickpeas are so well seasoned, and the lemon juice and spices give it just the right kick. Leftovers kept well.

I love so much about Milk Street! However, not everyone has a microwave. I appreciate when you detail the effect you want, then I can figure a work around
