Canned cannellini beans transformed this otherwise long-simmering soup into an easy weeknight meal. The Parmesan rind added a deep savoriness; some grocery stores sell just the rinds, or if you have a chunk of Parmesan in your refrigerator, trim off its rind for use in the soup. If you reheat leftovers, you may need to add to additional broth, as the soup becomes thicker as it stands. Crusty bread is the perfect accompaniment.

Tip

Don’t fear the anchovies even if you are not an anchovy fan. They help build rich, meaty flavor in the soup but don’t leave any trace of fishiness. And don’t simmer the soup for longer than directed; overcooking causes the beans to break down and make the soup overly thick.

  • ¼

cup extra-virgin olive oil, plus extra to serve

Seriously!? Yep, it’s delicious
First time I have reviewed on this site. And this soup drove me to do it. It’s definitely a soup, and I think it’s great. Some people say it’s a little loose but I think it hits right and easy to make. The finishing with lemon, olive oil, and fresh parm made it delicious. My only deviation from the recipe is I added butternut squash and I had a left over leek I sautés with the onion. Great recipe Milk Street! And great site and info. Thanks!

Cure all
This recipe is outstanding! The velvety texture of the anchovie/rosemary infused broth along with the crunchy croutons is a home run. The lemons are a must they cut right to the point giveing a nice contrast and balance. I like to add a handful of dried seaweed to up the health and texture of this fantastic soup.

Cozy
Perfect on a cold rainy evening. I used 1/2 cup less broth, which concentrated the flavors and improved the ratio of beans. We both loved it.

Perfect Weeknight Meal
I made this last night for a Monday night dinner and it came out great! I did a few alterations just to work with what I had, but mostly stayed true to the original. I only had one carton (4 cups) of chicken stock, so I added only 2 cups of water per another reviewer's suggestion. I also happened to have some leftover grilled sausage, a pork rib and a bit of roasted honeynut squash. I cut all that into pieces and added it at the same time as the first round of beans. I also felt like it was missing something so I added quite a bit of dried Italian herbs. Served it up with a quinoa sesame bread and it came out really spectacular!

Best Kale and White Bean Soup!
Fabulous winter soup! Served with Dutch Oven Rosemary Bread. Dunking bread in soup every couple of bites made for a spectacular lunch!

Delicious! I had to use great northerner beans because there seems to be a city wide shortage on cannellini beans and it still turned out OK! I put an extra few inches of rosemary in and want mad about it :)

Any measurement conversion for anchovy paste would be greatly appreciated.

Hi Andrew -

One filet equals 1/2 teaspoon minced anchovy so 1/2 teaspoon paste would be an acceptable substitute for 1 anchovy.

Made this tonight. It's delicious. I rarely eat kale but will this is an easy and tasty recipe! I used a pecorino romano cheese rind instead of parmesan and the final soup only needed a touch more salt, and some black pepper. I'll definitely make this again.
