Farro, a type of wheat, cooks up with chewy texture and a nutty, subtly sweet flavor. It’s an ideal grain for adding substance to brothy soups like this one. When shopping, look for semi-pearled farro—the grains have had some of the germ and brand removed and therefore cook relatively quickly. Pearled farro will also work but the cooking time will be slightly shorter.

Delicious, easy soup
I am so grateful for other Milkstreet reviewers! I took everyone's suggestions and used all 3 veggies (carrot, zucchini and baby kale), AND threw in a parmesan rind which added a lovely richness, AND threw in some basil as garnish because I had some. This was the perfect healthy reset meal after a week of stress eating! Had a nice salad and rosemary bread and it was just right!

Delicious and so versatile
I love this simple, hearty and healthy soup. It's easy to make and adaptable for winter or summer veggies. Will keep making this for many years to come!

Why does the picture show big rounds of carrots, but none are called for?

Best Vegetable Soup!!
This is my new winter go to soup! I use all of the veggies - carrots, zucchini & kale - because it makes it more of a veggie soup. I also substituted pearled barley once and it was equally delicous but just took a little longer to cook. MUST TRY!!

Where is the note about the farro?

Lynn C.

Hi Melissa -

You can find the note about the farro in the paragraph at the top of the page (known as the headnote) about the recipe. For ease, We've copied it here: "When shopping, look for semi-pearled farro—the grains have had some of the germ and brand removed and therefore cook relatively quickly. Pearled farro will also work but the cooking time will be slightly shorter."

I used regular farro and just cooked it longer. I also added a couple of Parmesan rinds to the pot and used 1/2 thyme/ 1/2 basil. Top with some grated Parmesan! Fantastic!
