Another brilliant way to use fish sauce.

This recipe was a hit for my family. We often grill steaks, so this was a nice change in flavor vs the typical red meat grilling in our house, and the steaks were plenty juicy and flavorful (no need for a sauce or accompaniment…we just used a little white rice and veggies on the side). I tried the peppercorn sauce suggested with the recipe and was not a fan at all. The steak doesn’t need it in my view, and it’s basically just ground peppercorns.

Didn't even bother making the dipping sauce. Just loved the salty/cilantro slightly sweet flavor. I only let it marinade after seeing your headnote about going to long and it was perfectly seasoned on my skirt steak.

My family enjoyed this very much. Very flavorful! Lately, skirt steak has gotten very expensive in my area. Is there another cut of beef that would work ?

Delicious! Served with the pepper-lime sauce, which was a great accompaniment.
