Cabbage-based politiki salata may be a dish for fall and winter in Greece, but the bright flavors and crisp textures are great any time of the year. We were introduced to it at the Avissinia Café in Athens and find it is an excellent accompaniment to grilled meats and fish. The salad is best eaten the day it is made, but it can be refrigerated for up to four hours in advance; hold off on adding the feta and olives until just before serving.

Tip

Don't massage the lemon and salt into the cabbage and carrots. Gentle tossing will wilt the vegetables, but allow them to retain much of their crispness.

Simplicity belies the outstanding flavor!
This recipe is easy with ingredients we (mostly) have on hand. I’ve subbed other things for celery and used Kalamata olives on occasion. I almost use this as a template (cabbage + lemon dressing + something pickled + salty cheese). It’s always a hit!!!

Refreshing
My family couldn’t eat the whole thing on Day 1, it did get soggy as it sat.

Fresh and good, but not special
The dressing could have used a boost, like adding some herbs such as dill, oregano, parsley, etc. Also, it would have been better if emulsified so that it adhered to the vegetable mix rather than run through it. I think more oil and whisking it into the lemon slowly would have helped.

Any suggestions as to which green olives to use?

I like the Castlevetranos. They’re bright green and crunchy (and seedless).

Added a bunch of green onions and omitted salt in the first step to keep the veggies crispy. Very refreshing and tasty!
