In this recipe, we cook green beans in a scant amount of well-seasoned water into which a little butter has melted. Once the beans are just tender, we uncover the pan and allow the water to reduce over high heat, concentrating the seasonings. The butter that’s left after the water completely evaporates clings to the pieces, adding richness and flavor. If you like, toss in ¼ cup finely chopped fresh cilantro along with the sesame seeds.

Tip

Don't use a narrow pot, which can cause uneven cooking because the pieces will be piled too densely. The wide diameter of a Dutch oven (10 to 10½ inches is a good size) allows the pieces to fit comfortably, with most at least partially submerged in liquid.

Delicious
Followed the recipe, however it was for 2 people so I did 1/3 of the sauce ingredients for a half pound of green beans. Turned out perfectly and beans were delicious!

Andres Does It Again
Against all expectations, all of the boiled veggie recipes in this group are bangers. No exception here.

Solid
Good even with the mediocre quality of fresh green beans available in Ohio in January!

Even better the next day!
I made these for Christmas dinner and they were fine, but not exceptional. The next day as leftovers they were spectacular! When I make this again I'll let it sit for a little while before serving.

not sure what went wrong
I am a well seasoned home cook and have had an excellent track record with successful recipe results until I cooked the beans in this recipe. Once I removed the lid it took at least 10 min. for the liquid to evaporate leaving my beans a little over cooked and not very flavorful. I did you a mix of beans from my CSA box, some wider than the green bean. Any suggestions? Thank you!

Excellent! Simple and flavorful. Followed recipe without making any changes. None are necessary.
