Potatoes and pork seasoned with ancho chili powder and cumin make an easy, flavorful filling for tacos. Be sure to use a nonstick skillet, as the potatoes’ starch makes them prone to sticking. If you like, offer a few of the garnishes suggested and allow diners to top their own tacos.

Excellent!
I have made this simple, delicious recipe at least a half dozen times in the past year. Always a crowd pleaser. PS I almost always top off most of my tacos with a squeeze of lime.

Quick, easy & tasty!
Such a simple recipe sure made for some delicious tacos. I made this exactly as written and sprinkled lime juice over the pork and potatoes when done cooking. Definitely a keeper! Thanks again, Ms. Hattabaugh and Milk Street team.

Great Recipe but timing?
The only reason I gave this a 4 is because I literally had to guess the timing on everything.

A few small adjustments
Agree it could use more lime juice. Also, next time I think I'd remove the potatoes before adding the pork, so there could be more browning. Buy the time the pork was brown, the spuds started to break down (I guess that's why you leave the skins on). Tasty and simple.

This was good for such a simple dish. I think you'll definitely need to add some additional salt and lime juice though.
