The Afghan dish called lubya (sometimes spelled lobia) is a simple curry made with kidney beans. In our version, we use Roman or pinto beans, which have a creamier, more yielding texture than kidneys. The ingredients are few and the cooking time is brief, but the flavors in this vegetarian dish are rich, aromatic and satisfying. Serve with warmed flatbread to scoop up the beans or with basmati rice.

Absolutely making this again
I followed the recipe then I put this over brown rice I made using the same flavors and topped it with fresh avocado and cilantro. So good.

Easy healthy recipe
I made this recipe using dried kidney beans, which I cooked in advance for added convenience. The rest of the recipe comes together quickly, making it perfect for meal prepping. I also added a touch of fresh ginger for extra flavor and a healthy twist. It's a nutritious and easy.

Used two cans of kidneys, since I had them on-hand, and threw it on some brown jasmine. Really simple and a lovely variation on a rice/bean theme!

This was super fast and delicious. I used all three optional garnishes and served it over basmati rice.
