The soup called marak temani is a fragrant, chunky, golden-hued meat- and vegetable-studded broth that originates with Yemenite Jews. Its defining flavor is savory hawaij, a Yemeni seasoning blend of turmeric, cumin, black pepper and cardamom, but often includes a number of other warm spices. In our version, we combine a handful of ground spices from the pantry, and we season in stages to create layers and depth of flavor. Marak temani customarily is served with two condiments: zhoug, a spicy pesto-like herb puree, and hilbe, a paste made by blending soaked fenugreek seeds with lemon juice. We make a simplified zhoug using cilantro, scallions and pickled jalapeños for punchy, tangy heat. Spoonfuls of the puree added to individual bowls give the soup a pot of green, grassy freshness and pleasing heat. We serve this with warmed flatbread.

Tip

Don’t use boneless chicken breasts for this soup. We rely on the bones and skin of whole bone-in breasts, rather than store-bought chicken broth, to provide body and richness in the broth.

Great Soup for Cold Season
My husband can't eat potatoes, so I subbed hominy just to add something chewy and starchy. Otherwise, I made as written (except, as another reviewer did, I used half chicken both and half water). Perfect amount of spice and heat - just enough to clear the sinuses a little without being painful. Such a delicious and easy soup. I suspect I'll be making it a lot this Winter!

Not yo' momma's chicken soup
Easy to prepare, with beautiful color broth due to the tumeric. As with most soups, it's even better the day after. I went 50/50 on water and chicken stock. For the zhoug I borrowed a bit from another zhoug recipe on milkstreet, adding half parsley with the cilantro and fresh jalapeños from my garden. I agree with another reviewer to not skip on the zhoug. It adds a great herbal layer of depth with a light pop of spice. Will be making this again as the weather cools!

not yo momma's chicken soup
I loved making this soup. I went 50/50 on chicken stock and water. Saved a cup of the chicken breast after it had cooked in the broth for making chicken caesar salad for another meal. So juicy and flavorful. Looked at some other zhoug recipes on Milk Street and modified by adding 4 scallions and 50/50 on cilantro/parsley. Used my own home grown jalapeños to get a guaranteed bite of heat. While the soup is wonderful on its own, I agree with other reviews that you do not want to skip on the zhoug. If you have extra you can layer it on hummus, so good. Like most soups, this is even better the next day. Thank you for a great recipe!

Better than traditional Chicken Noodle Soup.
Made this for dinner tonight. It was very good. I didn't have fenugreek so substituted fennel seed. I did not chop up the fennel in the food processor, left it whole. Looking forward to the leftovers. Getting cold in TX, high 60 tomorrow.
