Stir-frying pasta and beef is unusual enough. Now add soy and oyster sauces and you’ve got East-meets-West comfort food. Called nui xào bò in Vietnamese, this dish starts by simmering pasta in a Dutch oven, then using the same pot for stir-frying for one-pot ease. We love the way twisty pasta shapes such as gemelli or fusilli capture the sauce and combine with the beef; cavatappi or casarecce are other good options. Rice pasta is terrific here, as it has a texture and flavor that calls to mind the rice noodles commonly used in Vietnamese cooking. Serve with Sriracha for pops of sweet heat.

Tip

Don’t forget to reserve some of pasta water before draining the noodles. You will need the starchy seasoned water to help the soy mixture coat and moisten the noodles.

An Easy Keeper
Short ribs were not available so we substituted ribeye like another commenter. Otherwise made as directed. I will do better trimming next time. I usually keep a little fat to get all of the meat, instead I need to get rid of a little meat to get rid of all the fat. Flavor was great, spicy and salty. The non-foody in the house is not a soy sauce or big salt fan, but thought the final flavor was nicely mellowed. He liked the dish and compared it to a dry chili mac. We both thought it was good on its own or with a side that would contrast with the heat of the dish.

Loved
Beef short ribs weren’t available, so I used a 1 lb strip steak. This was a fun change of pace for pasta. It was salty and savory with a little heat and sweetness. Will definitely make this again. Served with a green salad.

Delicious fusion dish
The unique blending of cuisines was very easy and tasty. Although next time I might use reduced sodium soy sauce.

Fantastic
Easy to make and turned out great. Stores around here usually only have boneless short ribs in the winter. Ribeye worked great.

Great, simple, flexible.
We loved this! It's an easy prep meal, low clean up and easy to modify. eg, I used ground beef and added a little fresh ginger off heat. But even more notable, it's a different flavor profile so it is an easy way to fight meal fatigue.
