Salty, sweet and spicy always is a winning combination. Here, we bake slices of red onion into rectangles of flaky puff pastry, then finish the tarts with blue cheese and honey infused with Aleppo pepper. Cambozola, sometimes referred to as “blue brie,” is a triple crème, cow’s milk cheese with light veining and a rich, creamy texture. It’s ideal for these tarts because it slices well after a brief stint in the freezer and melts beautifully when placed on the just-baked tarts.

Even when you screw up, these are great
I almost wasn't going to write a review because I was so careless reading the recipe. I sliced up the whole onion and had 14 half moons instead of 6 that I prepped in advance, but only took out 1 puff pastry sheet to thaw. Once I realized my mistake, I rolled the sheet thinner (therefore larger) than was called for and cut it up as best I could. I also realized just a moment too late, that I'd put the pastry on top of the onions BEFORE brushing them with olive oil and sprinkling them with salt and pepper. Still, I forged ahead. Guess what? Although they looked a little, um, rustic, they were delicious! Everyone asked for the recipe and ate several! I'll try again, the right way so they're prettier next time, but obviously, it's pretty hard to screw these up!

Delish and a hit
Made these for my holiday themed birthday party and for a work gathering. They were a hit both times!! They are easy to make and look a lot fancier than they are. Got asked for the recipe both times I made them:)

Excellent Appetizer
These tarts are surprisingly good. They're easy, don't require any hard-to-find ingredients and were a crowd pleaser. A definite repeat.
