Gambas al ajillo, or shrimp with garlic, is one of the best known Spanish tapas. Briny-sweet shrimp are gently cooked in a generous amount of olive oil infused with toasted garlic and, oftentimes, dried red chilies. The dish comes together quickly and easily, and with just a handful of ingredients, many of which you probably already have in the kitchen. In our rendition of gambas al ajillo, we add smoked paprika and pepper flakes, as well as finishing touches of parsley and lemon wedges. Feel free to use shrimp that are slightly larger or smaller, but be sure to adjust the cooking time. Serve crusty bread alongside for dipping into the flavorful oil.

Made it again
I made this again. We now have the Milk Street garlic cutter which made quick work of slicing the garlic. I used my trick of using hot smoked garlic and no red pepper whenever a recipe calls for smoked paprika and a hot pepper. That gives it just enough heat and makes preparation even faster. This is absolutely delicious and a quick meal for two.

Two Minute?
It took me much more than two minutes to strip the garlic cloves and slice them with with sticky fingers. Otherwise it was fast and so very good! Served it with a simple side salad, and it was only enough for two. The crunchy garlic in the oil was actually good sopped up with bread. Next time I will get the garlic ready far in advance.

Amazingly easy and exquisitely tasty!
I couldn't believe how easy this was, and I had all the ingredients at hand. I don't think it makes 4 servings unless you are serving appys.
