These sandwiches were inspired by tantuni, meat-and-vegetable wraps that originated in the coastal city of Mersin, in southern Turkey. They traditionally are made with pieces of twice-cooked lamb or beef and paired with a bright tomato-onion salad, all tucked inside lavash. To create an easy, pantry-friendly version, we’ve swapped flour tortillas for the lavash and ground beef (or lamb) for the filling. A simple mix of tomatoes, sliced onion and green chili (or bell pepper) is wrapped up with the meat, adding a spark of bright, fresh flavor.

Wonderful summer recipe
These are a family favorite! I have been making them for two years, ever since the July 2023 issue came out! I regularly use ground lamb. Beef was just not as delicious. I buy Trader Joe's lavash. It is the perfect size for this recipe. Also, sumac is easily found in the Los Angeles area middle eastern stores, so I use that, a 1/1 swap instead of lemon juice. I use both bell pepper and jalapeño/fresno chili, and sometimes include mint. Out of season, quartered Campari tomatoes do work. ---James' wife, Linda

5 stars for fast, easy and tasty
If you use the suggested tortillas, these are lightening fast. I love the yogurt and olive oil flatbreads on this site so opted to make those just brushing with a little garlic butter. With them I made 2 wraps for each of 3 of us. They went very well with it. I went with lamb I had in the freezer and did a mix of parsley and mint I had in the garden. Will do again when I have good tomatoes coming from the garden in a couple months.
