Our update to tuna noodle casserole incorporates a few fresh, grown-up changes, transforming the dish into a fantastic meal-in-one with lots of pleasing textural contrast. Anise-y fennel and soft, sweet sautéed onions build a flavor foundation, with white wine for hits of bright acidity. The mixture is combined with cream, plus earthy thyme and briny capers before being tossed with shell pasta and nutty Gruyère cheese. An herbed crouton topping, made extra-crisp by a quick bake, brings crunch to each bite. Either olive oil- or water-packed tuna works here; we prefer the former, as its flavor and texture are richer.

A tasty and elevated interpretation
We love the humble tuna casserole, so when I saw this recipe, it seemed as though it might be fun to do for a dinner party. It was wonderful! I didn't do the bread crumb topping as a friend made and brought a kalamata olive bread that went perfectly with it. I also added more cheese than the recipe called for, using both gruyere and gouda, used three cans of tuna, and added a little bit of milk to the cream sauce to counter any potential dryness. It turned out rich and delicious, and went well with all the sides people brought.

Substitutions?
This recipe looks excellent - looking forward to trying it. Wondering if you would recommend any other fish/seafood substitutes? I’m not a huge fan of canned/prepackaged fish.

First try- would make again and doctor
Lovely but bland and on the dry side for the amount of pasta and croutons. Very nice combo of capers and tuna and fennel!
