Frozen puff pastry makes this elegant and impressive savory tart easy to pull together. We use za’atar, a Middle Eastern herb, seed and spice blend, to add a perfect flavor accent to the sweet, summery tomatoes and zucchini. To keep these high-moisture vegetables from releasing water during cooking—and leaving the pastry soggy—we salt the slices for 20 minutes or so while the oven heats to draw out excess juices. The bonus is vegetables with more concentrated flavor that are nicely seasoned. As for the puff pastry, we prefer Dufour because it is made with butter and is of a size that needs only minimal rolling after the sheet is unfolded. Pepperidge Farm puff pastry works, too, though it lacks buttery richness. You will need only one sheet from the 17.3-ounce box (which contains two sheets), and it will need to be rolled out into a rectangle roughly 10 by 14 inches. Serve the tart warm or at room temperature.

Tip

Don’t forget to leave a 1-inch border when poking holes in the rolled-out pastry. The holes help prevent too much lift in the area covered by the veggies while the border bakes up into a light, crisp crust around them.

milk Street comes through again
Made this recipe exactly as directed with one exception we used shallots instead of red onion. Exceptional! Milk Street is changing the way we cook.

Delicious!
Served it as a side to crispy coriander dusted chicken thighs. Our family loved it! Salted the veggies and did a good pat down after 20 minutes resulted in zero issues with a soggy crust. Used a flavorful evoo and fresh feta.

This was amazing
I made the recipe as written and used the Dufour puff pastry. I did not have any soggy crust. It was perfect. The flavors melded together so well. This is a winner, and I will be making it often.

Soggy tart
This was a very flawed recipe and a terrible waste of time and of good ingredients. The vegetables INCLUDING THE ONIONS need to be roasted in advance, not just salted and left to drain for twenty minutes; anything else results in a very soggy tart. I recommend a 20-minute/375-degree roast after the draining period, then putting the vegetables in the oil/za'atar mix and on the puff pastry. I tried it that way with the second half of my puff pastry and it worked. The flavor profile was good, but I'm still very disappointed in Milk Street, which is unusual.

Amazingly yummy!
With mostly produce from pie garden, this was easy and wonderful. Served as brunch.
