Farro, a type of wheat, has a satisfyingly tender-chewy texture and a nutty flavor that’s accentuated by toasting the grains before they’re simmered. This autumnal salad matches toothsome farro with tangy-sweet apple, crisp celery and pungent onion that’s mellowed by briefly steeping it in the mustard vinaigrette. Be sure the farro is still warm when it’s dressed. As it cools, the grains absorb flavor. The salad is delicious served cold or at room temperature.

What a fantastic fall salad!
This came together quickly and is so fresh and healthy! I think we’ll have this in our recipe rotation going forward!

Delicious fall entree/salad
This is a lovely fall dish. We made it with just picked apples and used all the optional garnishes—sliced radishes, fresh goat cheese and toasted walnuts. This is going to have a place on our Thanksgiving table to be enjoyed by everyone—vegetarians and omnivores alike.
