This chicken salad draws inspiration from Thai flavors: fish sauce, coconut, lime and fresh chili. You can poach your own chicken to add to the salad, or purchase an average size rotisserie chicken to obtain the 3 cups shredded meat needed for the recipe. In an airtight container in the refrigerator, the salad keeps well for about 24 hours, but if making ahead, hold off adding the herbs until just before serving.

Tip

Don’t use light coconut milk. It’s flavor and consistency are too lean and will water down the dressing.

Easy Peasy & Delicious!
This delicious meal came together fast and was very tasty. I cooked the chicken in the air fryer while I chopped veggies. For my taste I added a little extra lime juice. This is 100% a keeper.

Very tasty
Easy, and full of flavour. Used curly cabbage instead. Extra chillies. Kept half of the chopped cabbage with herbs aside for two days later and used the entire dressing for the half portion now. Zested the limes to get max limeness goodness. Flawless.

tasty and quick!
Made this and absolutely loved it. It keeps well for a few days too, which is handy. I was worried that the coconut would be too much, but it ended up being very subtle and the fish sauce is a delightful bit of umami. Highly recommend for a low-effort meal for leftovers on those summer days that you don't want to turn on the oven.

Family loved this.
Definitely a winner. I'm not sure what the commenter is talking about with a lack of flavor, perhaps they did not add in the fish sauce and lime juice? This was packed with flavor! With that said, I didn't follow this recipe word for word. I used Napa cabbage and threw in a kohlrabi and some sliced spinach. And I added peanuts to the cashews because I ran out. All great.

So good. Will be making it again!!!
My husband and I loved this. It was a perfect dinner for a hot night. I made it exactly per the recipe with one exception. I reduced the amount of jalapeño and only used 1/2. It was perfect for us. Any more and it would have been too hot. The recipe says serves 6. The two of us ate it for dinner with only a little leftover
