This hearty stew of sweet potatoes and quinoa was inspired by the Peruvian dish called quinua atamalada. Use quinoa of any color, and be sure to cook it to a creamy, risotto-like consistency; it should not be dry and fluffy. While true atamalada uses Peruvian chilies, this recipe incorporates Mexican canned chipotle chilies in adobo sauce, which we always keep on hand because they’re a terrific way to add chili heat along with smoky flavor and a touch of tanginess. Peruvian salsa criolla, a simple relish of lime-steeped sliced onion and chopped cilantro, is a perfect embellishment that brings sharp, fresh flavor and crisp texture to the stew; if you wish to try it, see the recipe below.

Very easy & tasty!
This is a very simple recipe (maybe took 45 min-1 hour including prep). This was good but adding the salsa criolla definitely kicked it up a notch.

Great with changes
This was pretty good as written, but I made two changes the second time around that, in our opinion, put it in the excellent category. First, I have a spice blend that has 2 parts cumin, turmeric and garlic powder and 1 part Mexican oregano, smoked paprika, black pepper and kosher salt. I added 2 teaspoons of that during the last 30 seconds of cooking the adobo mixture. For added heft, I added a can of rinsed Great Northern beans in the last 10 minutes of simmering. We think those changes brought it from 3 stars to 5. The salsa criolla was excellent, and I used it both times.

Delicious!
I added 3 of the chipotle chilis for more of a kick. Big fan of the recipe and would definitely make again.
