In Provence, France, a tian is a casserole of sliced vegetables as well as the round, shallow earthenware vessel in which the dish is baked. A classic tian showcases an assortment of summer produce, but here the focus is on tomatoes seasoned with garlic and herbs. We opt exclusively for plum tomatoes, which are firmer and drier than regular round tomatoes, and because they withstand long baking and yield deep, rich, concentrated flavor. Ripe, in-season tomatoes are best, of course, but even less-than-stellar fruits are good. We love this served warm with crusty bread and cheese, but the tomatoes can be refrigerated for up to a week and tucked into sandwiches or offered alongside grilled or roasted meats and seafood.

Tip

Don’t worry if the tomatoes are tightly packed in the baking dish. They will reduce in volume as they bake.

Best way to use up extra tomatoes!
Prepared as instructed twice first time with fresh rosemary sprigs, found the stems to be a little woody. Will remove leaves and rough mince next time. Second time, I didn't have any rosemary, so used fresh thyme, because some stems we a bit woody, removed the leaves from the stems and sprinkled all over. Both times it came out just like the picture and was sooo good. This now a favourite way to serve tomatoes at my house. Thank You Milk Street!

It worked
I got 2 lbs of crappy supermarket tomatoes (normal ones, not plum as directed) and this transformed them. I might add 1/2 tsp of sugar at the end.

Soooo delicious!
I have tried many roasted tomato recipes and none came close to this one. Spectacular! After making it, I ran out and bought more plum tomatoes to make a second batch!

Amazingly good!
This was an amazing dish that I am putting on repeat. I used basil and goat cheese. I also added one sliced leek to the chopped garlic and it added great flavor.

Really, really good!
Having never made nor had this before, I would have liked amounts for salt and pepper ... at least as a starting point. 6 Tablespoons of olive oil seemed like a lot perhaps making it too oily, so I used only 4 tablespoons which worked out just fine. If you've not made this yet, seize the opportunity before those wonderful, unwaxed, summer plum tomatoes are gone!
