At Trattoria Antico Falcone in Rome, palline al verde—which translates as “green balls”—were small dumpling-like orbs of ricotta, Parmesan and an abundance of spinach. Since the only binder was egg, their texture was delicate and creamy, and their flavor was fresh and light, complemented by a simple tangy-sweet tomato sauce. A dredging of flour just before the palline were cooked created a barely-there coating that helped hold the dumplings together as they simmered and gave the sauce a surface to cling to. When re-creating the dish, we found it necessary to also add a little flour to the dumpling mixture to accommodate the quality of the ricotta sold in U.S. supermarkets. Store-bought frozen spinach, squeezed dry to remove excess moisture, offers convenience without sacrificing flavor or texture. Antico Falcone offers palline al verde as a first course, but with crusty bread and a leafy salad alongside, we think it makes an excellent light main.

Tip

Don’t skip the step of refrigerating the dumplings before dredging them in flour and forming them into balls. They are easier to shape when chilled and will hold together better when simmered.

For the dumplings:

  • 2

10-ounce boxes frozen chopped spinach, thawed

Excellent dish - light and great flavor. Easy to execute. Remove as much water as possible from spinach and strain ricotta a bit - doing that ensures they will hold up in the low simmer. I added a small parmesan rind to tomato sauce just because I have so many and infused the basil and removed later just because I like it that way. I did use some fresh for garnish. As a side I crisped up some gnocchi in a pan with olive oil. . Takes about 8 minutes so the timing is perfect. Entire meal was one of the best we’ve had. Thank you for including this in your website and in Italy Backroads. Will make this again and again.

Elegant, delicious and easy
I did a trial of this recipe in advance of a dinner party, not something I usually do. The process was straightforward, easy to follow and came together quickly. The whole milk ricotta from my grocery store was dense and dry. Thoroughly squeezing the water from the frozen spinach is key. The combination required less flour than indicated and the end product was light, delicate and very flavorful. Actually, couldn't wait for the party to give this delicious recipe a go!

Interesting, differrent, delicate. . . worth the effort!
I made some changes to make this gluten-free, as I have celiac disease. To the dumplings, I added one more egg, 1/4 tsp. xanthum gum, and subbed Bob's Red Mill gluten free 1:1 Baking mix for the wheat flour. Because I was adding more liquid with the egg (perhaps I should have used just the egg white?), I squeezed the spinach until it weighed just 6 ounces. The dumplings held together beautifully as they simmered. I have frozen half the sauce and half of the dumplings for a quick meal down the road. Thank you for this recipe!

So delicious!
Made recipe as called for but substituted cassava flour for wheat flour and they turned out perfectly. Used homemade ricotta and drained well so it was nice and dry

Delicious even with dairy-free ricotta!
I was worried the dairy free ricotta would ruin the recipe but it was fantastic!
