Rich with cheese, crusty bread and an eggy custard, stratas can easily serve a crowd. These savory bread puddings are exceptionally versatile and can include a variety of vegetables and meats, such as the spinach and ham featured here. To streamline prep, we call for thawed frozen spinach; be sure to squeeze it dry so the strata won’t become soggy. This is a great do-ahead dish. Assemble the strata, cover with foil and refrigerate overnight. The next day, the foil-covered strata can go directly from the refrigerator to the oven. Bake for 1 hour, then uncover and bake for about another 20 minutes.

It seems to me that the head note times are for make ahead, it will be colder from sitting in the refrigerator as opposed to fresh. Just my opinion.

Simple to Make & Tasty, could use a little more flavor. Will make it again with a little flare.

Nice flavor, but too mooshy.
I am guessing that more eggs and/or more bread would help, but am not certain. The end result was very mild in flavor and very very soft.

Wow! Measurements so far off for me
I made 3/4 recipe for an 8x10 pan. That would be 3 cups milk and 4 cups bread. I ended up using 8 cups (12 ounces) to fill my pan, and it was still way too soft, despite baking it for the required time, covered and uncovered. Also, I let it rest for 15 minutes and it still so hot that it burned my mouth. Won’t be making this again!!
