Spaghetti with Tuna, Green Olives and Tomatoes
This pasta dish is a riff on one we learned from home cook Eleonora Fratini Martini in the Marche region of Italy. She transformed canned tomatoes into a complexly salty, umami-rich sauce using anchovies, tuna and tons of olives. Like Martini, we use green olives; they are firmer and more buttery than black ones and give the sauce a meaty quality. We found that olive oil–packed tuna—plus a splash of its packing oil in place of the anchovies—yielded our desired level of brininess. Be sure to avoid tuna packed in water. It lacks the flavor and richness of oil-packed tuna and has a drier, mealier texture. Also, look for tuna with no added salt, which will give you better control over the salinity of the finished dish.

Servings
Don’t use diced canned tomatoes. They are too firm and won’t break down properly in the sauce. They also often have skins attached, which makes for an unpleasant texture in the finished dish.

Ingredients
-
¼
cup extra-virgin olive oil, plus more to serve
-
4
garlic cloves, thinly sliced
Directions

01In a large pot, boil 4 quarts water. Meanwhile, in a 12-inch skillet over medium, combine the oil, garlic and tomato paste. Cook, stirring often, until the garlic is softened and fragrant and the tomato paste darkens, about 2 minutes. Stir in the tomatoes with juices, ½ teaspoon salt and ¼ teaspoon pepper. Cook, stirring occasionally, until thickened, 3 to 5 minutes. Add the olives, tuna and 3 tablespoons of the reserved tuna oil. Stir well, then remove from heat.
