The combination of sweet snow peas, peppery arugula and fragrant mint makes for a bright and refreshing salad. We toss red onion slices with lemon zest and juice to temper their bite, while also creating a flavorful base for the dish. A generous dose of feta brings briny creaminess that ties everything together. Be sure to get the peas nice and dry after blanching them, otherwise the moisture will water down the salad.

Great summer side & quick gtg solution
This was a crowd pleaser at the gathering I threw it together for, just 20 min before heading out the door. I had to sub shredded kale for the arugula, which I massaged a bit of lemon juice a a salt into whilst blanching the snap peas. Loved the combo of flavors and textures.

We Love This!
This salad is so different and refreshing. A great balance of salty, tangy, and herbacious. Totally unexpected and it has become a favorite.

Would probably take out either the arugula or mint
I made this as part of Easter dinner. I love mint, arugula, and snap peas and thought this would be perfect. I think the double whammy of mint and arugula gave it a little too much bite for a spring salad. If I make this another time, I would take out the arugula or reduce both by half.

Fantastic with Changes
I omitted the arugula, steamed bias-cut asparagus with the snow peas and then added them both hot to the red onions, dressing and finely chopped mint. I let it all cool for about 5 minutes, then crumbled the feta so that it was soft and a bit melty and served it all room temp with 2tsp of sumac sprinkled in. It's a fantastic starting point and can probably take a lot of customization!
