In Romania, mămăligă cu brânză și smântână, or polenta with cheese and sour cream, can be the center of a meal or served as a side to roasts and braises. We prefer the robust texture and flavor notes of coarse polenta or stone-ground yellow cornmeal. Instant polenta can be ready in a flash, but its taste and consistency are less nuanced. If you wish to use instant polenta, cook 1½ cups and 1 tablespoon salt in 6 cups water according to the instructions on the package. Add the butter and pepper to the finished polenta as directed. The dish can be made ahead. Assemble the layers in the baking dish, but stop short of adding the sour cream and final sprinkling of cheese. Cover and refrigerate for up to 24 hours. When ready to bake, uncover and top with the sour cream and cheese. Cover with foil, bake at 425°F for 30 minutes, or until warm at the center, then uncover and bake until spottily browned, another 20 to 25 minutes.

Tip

Don't allow the polenta to cool before assembly. Layer it in the baking dish with the cheese while still hot, before it begins to stiffen and set up.

Quick Pickle
I haven't made this yet (but I can't wait). I watched the video and she made a quick pickle as an accompaniment. I couldn't find the exact recipe --- what are the measurements for the onion, vinegar, sugar and salt? Thank you.

Came out delicious. I used instant polenta since I couldn’t find the coarse one.

Easy. . .
I loved that polenta was cooked in the oven. So easy. Once baked, it was very cheesy and delicious. I will try a different blend of cheeses next time.

A few tweaks added a lot more flavor
When I first read through the recipe, I thought it sounded really bland, but I knew I could spice it up a bit. Here are my tweaks: - I used chicken broth instead of plain water to cook the polenta - I added 6 oz. of diced Polish sausage and a minced Fresno pepper to the polenta as it was cooking. I omitted all the the butter, since the sausage provided the needed fat. - I chose Parmesan and smoked black pepper Cheddar instead of the bland cheeses requested in the recipe. Also I increase the amount of each cheese to 4 oz. With the above tweaks, this polenta can serve as a flavorful main dish, instead of a bland, starchy side dish.
