Maroulosalata is a simple Greek salad that typically includes chopped romaine, salty feta and a lemony dressing. To turn the light, bright staple into a hearty dinner, we add tangy-sweet tomatoes, meaty olives and cannellini beans. Warming the beans before adding dill, lemon juice and olive oil is an easy way to boost their flavor. The heat makes the beans expand; as their surfaces cool and contract, they absorb the seasonings. We also add the red onion at this stage, which both flavors the beans and helps tame the allium’s raw bite. Though substantial enough on its own, this salad also pairs wonderfully with any grilled or roasted protein.

Tip

Don’t skip heating the beans. It’s important that they swell, then cool and contract to absorb the seasonings. Also, don’t buy pre-crumbled feta; it tends to be dry and flavorless. It’s better to buy a block, then crumble it yourself just before using.

Romain and White Bean Salad -- Delish
This recipe is easy to make and a great addition to grilled salmon! I didn't add the romain, instead I let my guests take some romain and then top it off with the white bean mixture. This worked great and because I didn't add the romain to the mix, the salad was great the next day.

Delicious salad!
Unusual flavors for us, but delicious and welcome. The olives (I used green for preference) and feta gave plenty of salt, so I'll skip the 1/2 tsp added at the end the next time. We loved this as a main dish, then enjoyed the leftovers as a side with grilled chicken. Add the romaine just before you eat so it doesn't get soggy, and make sure to let leftovers warm up a bit to loosen the dressing. We'll definitely make this again. (Consider adding more tomatoes - their bust of sweet is wonderful in this salad!)

The perfect summer dinner
This delicious salad manages to be both light and satisfying! Served it with halibut roasted with cumin, lemon and bay leaves for a perfect meal.

addictive!
A salad that stands on it own as a meal. The beans are creamy and flavorful thanks to the preparation which is genius. The onions remain crispy and add some mild sweetness while the romaine provides more crunchy texture to counter the creamy flavorful beans. The feta and olives add great brininess but not overpowering. I did use nicoise olives which were nice and fruity. The longer the salad sits, the more flavorful it gets. I added the romain with each serving so it would stay crisp. Love this salad for its substantial meatiness thanks to be beans and the punch of the dressing and the bright herbs. Make this salad!

Good for a summer lunch or dinner
This reminded me of a delicious salad I might order in a favorite bistro. I had to use basil and chickpeas as substitutes, and they were great. I also bumped it up with some parboiled haricot verts, added to the warm dressing.
