In this colorful side, the tartness of lime counters the natural sugars in sweet potatoes. We roast the chunked potatoes on a baking sheet, leaving them alone for the entire time so that the sides that are against the hot pan brown nicely and add notes of caramel bittersweetness. When done, we immediately toss the potatoes with lime zest and juice plus scallions and seasonings, so they absorb the flavors as they cool. We highly recommend using unrefined (also called virgin) coconut oil, as its tropical flavor and aroma comes though clearly, but regular coconut oil is fine, too. Serve warm or at room temperature alongside grilled or roasted chicken or fish, or pair them with rice and beans for a vegetarian meal.

excellent fall side dish
This is such a winner! The lime zest and juice gave it a surprisingly fresh and vibrant flavor. The family loved it and this morning I spread the leftovers on my toast for breakfast.

One of my new thanksgiving favorites
I used this recipe for my Thanksgiving dinner and it was a hit. The combination is a very nice balance between sweet and tart that plays very well on the plate with the other heavier flavors on the plate. I made it once prior to my turkey dinner and I liked the flavors of the dish better the next day. So I made the dish the day prior to my turkey dinner and heated it up in a 350 oven the day of for 20-25 minutes to heat it for the table.

Delicious!!!
These sweet potatoes are divine! The lime and cayenne add surprising pops that really enhance the potatoes. And so simple to make… I will definitely make these again!

Big Hit on Thanksgiving
Nice combo of citrus tang, potato sweetness, onion flavor, and just a touch of heat. A crowd pleaser.
