This hearty soup, which happens to be vegan, gets loads of flavor from a base of sautéed shallots, tomato paste, cumin and smoked paprika. The earthiness of green lentils is offset by the sweetness and bright color of roasted red peppers. Spinach, added at the end of cooking, wilts into the broth, yielding a complete meal in a bowl. We use water as the cooking liquid, but you could use vegetable broth if you’re so inclined. And if the finished soup is too thick for your taste, thin it with some hot water. Serve with warm crusty bread.

Tip

Don’t use lentils du Puy for this soup; they hold their shape and remain too firm. Regular green lentils, on the other hand, will soften to a silky texture that lends body to the broth.

Loved it!
We loved this recipe. I think it could be a slow-cooker or instant-pot recipe (maybe the Instant Pot preferred for its ability to really cook down the shallots) because although it's quick to come together and was great right out of the pot, it was much more thorough and complete after a couple days in the fridge. I'd cook up the shallots in an Instant Pot, then let this just cook all day long, given how good it was after a rest in the fridge. We loved lemon and zest in it, but I found the killer tartness really came from Tabasco sauce. We'll do this again soon, and enjoy how the lentils and shallots as a base gives you so much flexibility in where you go from there.

Delicious, hearty, flavorful soup
This is a low-effort/high-reward recipe, my favourite type! Delicious flavours; roasted red peppers, ground cumin, a bit of smoked paprika, lentils that start to melt and thicken the soup. I took the suggestion of using vegetable stock in place of water and liked the result. This is a winner.

Best Lentil Soup I've Made or Eaten
I made this Tuesday Night recipe on a Tuesday night, by chance, and it was spectacular! Before service I added about 1 teaspoon of Trader Joes Umami seasoning and 1/2 teaspoon of garlic powder. What I loved most was the mouth feel of the whole lentils. I'll make it again and suggest you try it too!

Winter warmer
The soup was not only hot out of the pan, but it exuded a warmth of taste from the smoked paprika. I opted for a spicy paprika as opposed to sweet. Definitely making this again.
