Cheese baked until crisp enhances a simple roast of potatoes and shallots, adding texture and savory richness. Aged Gouda has rich, nutty, butterscotchy notes; manchego is similarly nutty but with some tanginess and subtle sharpness. Both are delicious here, so use whichever you favor. A sturdy wide metal spatula is the best way to get all the crispy, cheesy bits off of the baking sheet and onto your serving platter. Serve with a roast, steaks, chops, chicken or sausages.

Roasted Potatoes w/Gouda and Thyme
What great flavors, delicious. I had to modify the recipe somewhat due to cooking for two people, but loved the recipe and very easy to make.

Outstanding
I thought the recipe was easy to follow. I had manchego so I used that and fresh thyme from my garden. I will make it again. Thanks for a great recipe.

Crisp exteriors, creamy interior
Perfect outcome, easy to do. These potatoes tasted great using the alternative recommended cheese, Manchego. Will try a gouda next time to compare. It stole the show at dinner!

Perhaps I Will Eat Only This
Look. Maybe not the most mind-blowing or impressive thing I'll ever make, but it certainly hits all of my comfort buttons. Used 4oz+ shallots and, for simplicity's sake, a 6oz wedge of manchego.

Crispy and cheesy!
Delicious cheesy potatoes with minimal work. The shallots add perfect flavor. Will use less oil next time.
