This hearty hash is weeknight-quick thanks to potatoes that are parcooked in the microwave. Smoky bacon, spicy poblano chili and sweet corn bring layers of contrasting texture and flavor. Dried Mexican oregano adds earthy, citrusy notes and is available in most well-stocked supermarkets, but standard Mediterranean oregano works well, too. Top with runny-yolk fried eggs and one or some of the optional garnishes listed below.

Flavor Party!
What a flavor party! We used Anaheim/Hatch chiles instead of poblano and topped with cilantro, so it was a bit brighter. Topped with a fried egg, this was breakfast magic.

Great way to empty your fridge
I had almost everything for this except the poblano. Subbed in bell peppers and it worked really well. This recipe is really forgiving for varying amounts of ingredients. I just really needed to empty out some veggies, spare potatoes, and some bacon I had on hand and this was perfect.

So good!
Last minute decision to make as a side with grilled burgers. Had all the ingredients except the bacon. we didn’t miss with the fresh corn.
