When selecting ginger, look for large, chunky pieces without many nubs; it will be easier to peel and slice. To slice the ginger, a mandoline is good, but a sharp Y-shaped vegetable peeler and a light touch works, too.

Tip

Don’t slice the ginger too thick, it is fibrous and can be tough and chewy.

Question
Am I correct in assuming that the ginger is to be sliced lengthwise rather than across? In either case, this sounds super easy & tasty! Merci!

The right spice!
This was really quick to put together. Made it to go with the Yakiudon Noodles, but will be making this for other dishes as well.
