The childhood favorite, egg in a hole, gets a boost in flavor from the garlic clove that’s rubbed onto the bread before toasting and the Parmesan cheese that browns and crisps during cooking. For ease, we use a baking sheet in the oven rather than a skillet on the stovetop, so four servings can be made simultaneously. Be sure to choose large, sturdy sandwich bread that’s sliced about ¾ inch thick. Thinner slices won’t be deep enough to hold the cracked egg in the center cutouts. This recipe can easily be increased by half to make six servings.

Decent
My husband and I enjoyed this recipe reasonably well. If making it for a large group of people, it might be the way to go. However, in order to get the bread to toast, I had to cook the eggs to almost hard cooked. I ended up turning on the broiler to get some browning on the bread. It still tasted good but the eggs were more cooked than I prefer and the bread less. One way around this might be to put the prepared bread in the oven until lightly toasted, then remove the pan from the oven, flip the bread slices and then add the eggs and precede with the recipe.
