This is the delicious marriage of orzo pasta and fettuccine Alfredo. We cook the orzo like rice, as if making risotto, so the starches create a creamy, silky sauce. Butter and Parmesan join the mix as a nod to Alfredo, and sweet peas add color and sweetness. For the lushest texture, use a good-quality bronze-cut pasta; it will release more starch during cooking. At the supermarket, look for orzo with a rough, floury appearance. Widely available De Cecco works well, as does DeLallo.

Family favorite.
I’ve made this as written, I’ve made it with onion instead of shallots, I’ve made it with chopped broccoli instead of peas, I’ve thrown in chicken, I’ve thrown in Italian sausage. Every time it has turned out absolutely delicious. Make sure the parm is very finely grated, otherwise it doesn’t stir in well, other than that, it’s very easy, quick and extremely tasty. Great recipe!

Great flavor
Great spring flavor. Cooks like a risotto, including the stirring. Mine turned out a bit loose when the orzo was ready; not sure why. But it did firm up a bit as it cooled. I used sliced snap peas instead of frozen, which was great.

Easy and delicious.
Really flavorful from basic pantry ingredients. I didn’t have a shallot on hand so I subbed a shallot amount of minced yellow onion. I also found I didn’t need to add the additional half cup of water at the end, the pasta was perfectly done and creamy without. I’m guessing it may vary with pasta brands. Absolutely delicious and easy and I’ll definitely make it again.

Peas and Pasta, Please
I had all the ingredients and I have been loving frozen peas lately, so it was an easy choice. Very easy, although you have to be near the pan to stir the orzo. Delicious!! I'll make it again.

Fantastic
So easy to make this simple dish with a very bright and satisfying taste. Added some extra ham and it made for a standalone meal. Will be making and enjoying this recipe on a regular basis.
