Latin American mojo is a punchy sauce/marinade starring citrus juice or vinegar, herbs and lots of garlic. It’s often used to season meat, but is also a popular accompaniment to fried plantains or yuca. We turn those flavors into a bold, citrusy garlic-herb paste. We double down on the seasoning paste, using some of it as a marinade for bone-in chicken parts and the rest as a bright finishing sauce.

Delicious
Very good. Though I found it confusing that the the orange juice and orange zest were listed as a single ingredient. It defeats the utility of a list. I also found this wording confusing: "Measure 1 tablespoon of the mixture into a small bowl, then stir in the orange zest and remaining 2 tablespoons juice;" It is unclear which container I stir in the orange zest and juice. Mine turned out a little wet, but still tasty.

This was a hit. I followed the recipe and made a meal everyone enjoyed. The orange was a nice change from lemon. I highly recommend this recipe.

Pretty good.
An easy flavorful tray bake. I cut the amounts down for a 2 person serving and it worked out great.
