Make this recipe today!
I planted a Burpless variety cucumber plant and it is turning out cucumbers by the dozens, so I’m constantly looking for new ways to use cucumbers, and this recipe is a winner. It’s quick and easy, it uses just a few ingredients that you probably already have on hand, and it’s just delicious. The lime juice and ginger work together with the sugar to create an unusual but terrific cucumber salad with a zesty, tropical feel. This recipe will be both shared and made often.

Something's missing
I had high hopes for this, but after an hour's marinating, it was lacking in balanced flavors. The ginger dominated, which is fine, but the lime juice didn't stand up to the ginger. The salt didn't bring it to life (but too much salt would have been unpleasant), the sugar seemed nonexistent, and a bit of discernible sweetness would have been welcome. Maybe it will be better after 12 hours in the fridge.
