This recipe was inspired by the Iraqi dish known as masgouf—fish grilled over an open fire and smothered with cooked onions and tomatoes. We cook salmon fillets under the broiler, so you don’t need to fire up the grill and the dish comes together easily even on weeknights. Sliced onion and cherry tomatoes are roasted at a high temperature to caramelize them and concentrate their sweet flavors. Curry-seasoned salmon then is nestled into the sauce and quickly broiled, so make sure your baking dish is broiler-safe.

A Real Winner
Really good. Really quick and easy! I made 1/4 recipe just for myself and cooked it in the air fryer. I used the air fryer setting for the tomatoes and onions and, for the salmon, six minutes on the air fryer's broil setting was perfect. I didn't have grape tomatoes, so I cut up a roma tomato. It was very good, but I am sure the grape tomatoes would have been better and slightly easier. Thank you for this wonderful recipe.

Yummy!
The spice balance in this is nice without overpowering the salmon. I had mint rather than parsley, and that worked nicely too.

Great!
This is delicious and easy. The onion/tomato/coriander sauce turns slightly sweet after broiling and mixes well with the curry rub on the salmon. The parsley-lemon sauce was very bitter and did not add anything to the dish for me.
