Large, buttery Castelvetrano olives are especially good paired with this braised chicken, a dish taught to us by Eleonora Fratini Martini, a home cook from Ascoli Marche on Italy’s Adriatic coast. But if you can’t find Castelvetrano, any jarred pitted green olive is fine. To ensure the olives season the other ingredients, lightly smash them with the flat side of the blade of a chef’s knife. A few tablespoons of butter whisked in at the end softens the punch of the olives and gives the sauce a glossy sheen. Serve with warm crusty bread.

Tip

Don’t cover the pot tightly when simmering the chicken. Keep the lid ajar to trap some heat but still allow for some evaporation, which concentrates the flavors.

Great quick braise weekday Meal
Great flavor, quick braise, works for weekday meal. Plenty of sauce, but I did added extra olives. For side dish, we had simple roasted Yukon gold potatoes with the left over rosemary sprigs tossed with olive oil, salt and pepper, then roasted at 425 degrees for 45 minutes.

Great weeknight recipes.
Wonderful flavor. I did up the garlic after the first time. The braising mellows it so a bit more did not bring too much garlic flavor, but added just enough for garlic lovers. Think I may try it with dry vermouth instead of white wine next time.

Home run
This is a very easy and very tasty dish. I was somewhat loose with the proportions, as the recipe doesn’t require perfect precision in my view, and served it with brown rice. Delicious!

Phenomenal
Made this quickly one week night with chicken breasts because we had them on hand - great flavor - will definitely put into the rotation and add wild rice or quinoa next time.

Comfort x10
I made this last night for three people and followed the directions exactly. I served it over basmati rice and it was beautiful. Next time I would double the recipe.
