For this simple, fresh take on green beans, we steam them in water with a few tablespoons of butter, then the lid comes off the pot so the water can evaporate, leaving the beans tender and lightly slicked with flavorful fat. The garlic-herb yogurt, spooned on before serving, is a creamy yet light flourish. This side is as good served at room temperature as it is warm.

Tip

Don’t forget to cover the beans for the first half of cooking; stir only once to ensure even doneness and prevent too much steam-heat escaping the pot.

A new favorite method for green beans
An amazing method for great green beans. Made exactly as written (except leaving the garlic out of the sauce) as a side for Christmas Eve dinner and everyone was asking about the recipe. On a platter with the sauce it looked beautiful and was even great cold from the fridge the next day — makes a lot.

Loved the sauce.
I suggest reducing the covered cooking time, as it might take more than 5 minutes in the uncovered part to evaporate the water. Nonetheless, the sauce really makes this dish great.

Delicious
I felt like there was too much sauce, but it was really delicious. Reminded me of a Greek-flavored green bean casserole.

Delicious
I definitely reduced the initial cooking time, but my beans were quite thin. We didn’t have chives but did have garlic scapes, which I pulverized in my food processor. I used grated garlic sparingly, and it came out great!
