Georgia’s staple snack, khachapuri, comes in many regional forms, but all are versions of savory cheese-filled bread. Adjaruli khachapuri, from the southwestern area of Ajdara, is the best-known variety outside of Georgia, and it’s easily recognizable by its boat-like shape. Near the end of baking, an egg is cracked into the cheesy center and a pat of butter finishes the still-hot khachapuri. For our version, we make the dough in a food processor, which also makes quick work of mixing the cheeses for the filling. Rather than top the bread with a whole egg, we add only a yolk, as we found it tricky to time the perfect cooking of the white. Adjaruli khachapuri is best eaten hot, fresh from the oven—tear off the edges of the bread and dip them into the cheese filling.

Tip

Don’t wait to add the egg yolk and butter to the khachapuri. Be sure to do so as soon as the bread comes out of the oven and stir to combine. The heat from the cheese mixture will both cook the yolk and melt the butter, creating a delicious sauce for dipping.

Simple, Khachapuri
I fell in love with Khachapuri at a local restaurant in Andersonville (Chicago), they called it Spinacolli as it was with spinach. Through experimenting I found that mixing the yeast and sugar into hot water for 5-10 minutes helps with the rise of the crust. I also found that Asiago in place of the cream cheese makes the cheese more intense and flavorful. I prefer to blanch a a bag (10oz) of baby spinach and mix into the cheese when assembling to make this similar to the Spinacolli.

Fun with Cheese!
This cheese boat was really fun. We had some decisions to make on where to slice/break off the bread and not have the cheese ooze everywhere, which became a fun game and we pulled out some tortillas too. Next time, I would use less feta as it was super salty, just a personal preference. I will make again in the future.

Fell in love with Khachapuri in Georgia 1993
In October of 1993, I was privileged to travel from Rome, Georgia, USA to Tbilisi, Republic of Georgia on the second Georgia to Georgia exchange with Jimmy and Rosalyn Carter’s Friendship Force. In 1991, the Friendship Force received the Nobel Peace Prize for their work with Russia and the beginning of independence for countries annexed after WWII. We home stayed and then were treated with a trip across Georgia with my roommate and two other women from Rome. We had fantastic food everywhere. Khachapuri was one of my favorites. It was served with breakfast nearly every day along with sweet rolls of some kind. Another favorite was tender beef steak I think from a tenderloin grilled over grapevines and sprinkled with salt. I’ve never been able to make my meat taste the same and I think it is the salt. Thanks for this recipe.
