This simple fish bake delivers tons of flavor but requires minimal prep. You’ll need a good amount of capers—¼ to ½ cup—along with some caper brine, which brings saltiness and tang to balance the sweetness of the vegetables. The onion and tomatoes get a head start on baking; once they’re soft and jammy, the fish fillets, which have been briefly marinated, are placed on top. If your fillets are thicker or thinner than about 1 inch, adjust the baking time up or down to ensure the fish doesn’t wind up dry and overcooked. Serve with warm, crusty bread or a rice or orzo pilaf.

Wow, just wow. . .
I made this with fresh golden tile. The only thing I added was some sliced fennel. We had it over pearl couscous. We loved it.

So delicious
Easily the best fish dish I’ve ever made. I don’t drink white wine so I just drizzled balsamic on the veggies instead. So making this again!

Delicious and easy to prepare
This recipe was very delicious. I made it using send bass fillets. I am not a fan of capers, so used only half the amount listed. My husband and I really enjoyed the flavor of the onion and tomatoes after they baked in the oil mixture. I cooked the fish approximately 10 min, at which time it was flaky. The presentation was colorful and beautiful. The fish was moist, and the flavor of the baked vegetables really enhanced the flavor of the fish. Will definitely make this again, and add it my list of favorite baked fish recipes. Thank you for another delicious recipe.

Easy and super flavorful
This is exactly what the headnote says it is - tons of flavor but requires minimal prep. I used halibut, because that's what I had, and it stood up great to the very tangy flavors. It's always amazing to me how cooking red onion cuts its bite. Really delicious - and REALLY easy!
