Contrasting flavors and textures make an easy traybake special. Cauliflower takes on light charring and becomes supple and tender while chickpeas roast alongside, turning toasty and crisp. A lemony, garlicky yogurt sauce ties everything together, and a spice blend does double duty, seasoning the cauliflower-chickpea mixture as well as the sauce. Curry powder lends a golden hue and an earthy spiciness; baharat, a Middle Eastern seasoning mix, leans toward warm, nutty, smoky-sweet notes. Serve as a side to meaty fish, like salmon or swordfish, or roasted chicken or lamb, or make it a light vegetarian main.

Easy and delicious
I made some Baharat, added pumpkin to the cauliflower, made some croutons, mixed it all together used the yogourt sauce, no garlic and found it delicious.

simple and delicious
I made this using Kashmir curry powder and garnished with microgreens so I know I deviated from the recipe but it was still amazing. I love roasted cauliflower but never cooked with chickpeas before, they added a very nice texture contrast. The yogurt sauce is essential IMO and after reading some of the other comments, I'll have to look for baharut!

Even better!
As good as this dish was with curry powder (and it was very, very good), it was even better with baharat. The fragrance coming from the oven was intoxicating, and the combination of baharat, pomegranate molasses and Aleppo pepper is just meant to be.

Excellent!
Very flavorful. I opted for curry powder this time, but I'm looking forward to trying baharat and other spice blends in the future. I garnished it with lots of cilantro, a drizzle of pomegranate molasses and a sprinkle of Aleppo pepper. For such a simple and quick meal, it was surprisingly good.

Astonishing
Normally, I find both the smell and the taste of cauliflower objectionable. For years, I have tried a variety of cooking techniques, hoping to find a way to actually like the vegetable. This recipe caused the cauliflower to transform from something barely tolerated into something truly delicious. Thank you!
