Cauliflower simmered until completely tender then pureed yields a luxe, velvety soup without any cream. A good dose of garlic and sharp cheddar cheese adds big flavor to the mild, subtly sweet vegetable. If you own an immersion blender and would like to puree the soup directly in the pot, do so after the cauliflower mixture has cooled for five minutes. Add all of the cheese to the pot, then blend; the texture will be a little less smooth than when processed in a conventional blender but the flavor still will be great.

Holy Cauliflower!
This soup is amazing! The flavor was wonderfully garlicky and the you would swear that it is made with heavy cream based on the creamy texture. Super easy to make. The only variation I did was I substituted 4 wedges of laughing cow cheese for the 2 cups of white cheddar cheese to limit the calories. It’s an amazing recipe!

Great Soup!
Wooster sauce is a great idea! We sprinkled Everything Bagel on top last night. Delish. An instant hit. I hope it freezes well. Individual portions for lunch! Yum

Easy Rich Soup
This soup is great! It is a little basic texture-wise, but is a great base to customize. Homemade croutons, green onions, one person’s suggestion of Everything Bagel seasoning was genius! My controversial topping: Tajin. It added spice and tang. This is hearty enough for a simple meal.

Winter Comfort!
Definitely don't miss cream with the addition of the cheddar cheese. I increased the amount of smoked paprika after tasting before serving. I loaded the food processor with most of the cauliflower and a bit of the liquid to make it a bit easier and safer to process. After the initial puree I was able to add the rest of the cauliflower. Probably not as smooth as it would have been if I had done it in batches but I hate the batch process. Normally I would have used my immersion blender but the food processor had just been used to shred the cheese! Topped with minced chives.
