Pesce alla ghiotta, or “glutton-style fish,” is a southern Italian dish commonly made with firm, meaty swordfish. The sauce—a chunky, quick-cooked medley of tomatoes, anchovies, olives, capers and sometimes raisins and pine nuts—epitomizes the bold, sunny flavors of the Mediterranean. In our riff on pesce alla ghiotta, we use widely available cod fillets, and we dredge them in seasoned cornmeal before quickly sautéeing them in a hot skillet. This step gives the tender fish a bit of texture, develops flavor and creates a surface for the sauce to cling to. Offer warm, crusty bread on the side for scooping up the sauce.

Tip

Don’t worry if the fish is underdone after browning. The pieces will go back into the skillet for a few minutes of simmering in the sauce, which will complete their cooking.

Yummy
Made this dish for friends and it was simple but absolutely delicious. I used soy sauce instead of the anchovies but the flavor was so fresh and balanced. Everyone loved this dish!

Cod! This was good!
Venturing out into the world of cod, relatively less explored, I happened upon this recipe. So glad I did. The piece of cod I chose was about 2 inches thick, uniform, and compact. I followed the recipe as written. The results were delicious. Moist fish done to perfection, the briny capers and deep umami of the anchovies, which essentially disappeared in the dish balanced seamlessly with the salty green olives. Served the fish with garlic butter rice and Italian flat and beans a crisp fresh blue cheese dressed wedge salad. Cold Sauvegnon Blanc and the rest is history! Thanks for a great recipe.
