This weeknight-easy curry gets lots of umami from fish sauce, richness from coconut milk and brightness from fresh ginger plus lime zest and juice. We lean on curry powder to deliver layers of spicing along with a warm, golden hue. The finished curry is brothy, only lightly thickened, and not at all heavy. Be sure to use regular coconut milk, not “light” versions, as it would result in watery flavor and consistency. Prep the lime zest and juice and the cilantro while the curry simmers. Serve with steamed jasmine rice alongside.

Tip

Don’t fully cover the pot during simmering. Leave the lid ajar to allow for some evaporation to help concentrate both the flavor and consistency of the broth. Also, adjust the burner as needed to maintain even bubbling for the duration of simmering.

Wow - Keeper
I cut this recipe in half (approximately) for a hearty one person lunch that I couldn’t quite finish that would be perfect for two. Outstanding! Only change was that I added some frozen peas with 4 minutes left. I did not find the sauce to be watery at all, could have been my loose measurements in halving the recipe. Use unsweetened coconut milk. I used frontier co-op curry, maybe a touch more than recommended, needed zero additional salt/pepper at the end. Super easy, fantastic recipe.

Delicious
My first attempt at a curry and I was enticed by this recipe because I could use a curry powder. When I put the fish sauce in, I was skeptical about this would turn out. It was exceptional. I would have liked to have had the curry thicker than this turned out, but still a 5 star flavor. Prep was easy, and while it cooked I cleaned up everything. Made a perfect weeknight meal.

Another Tuesday Night winner!
This simple curry is quick and easy to prepare, and the result is pleasingly light and packed with flavor. I did add a bit more lime juice than called for, just because we like it that way, along with a garnish of crispy fried spiced garbanzo beans for some textural contrast. Will definitely make this again.
