Inspired by Argentinian choripán, this sandwich stars boldly spiced chorizo and chimichurri, Argentina’s signature sauce. Tangy with vinegar and grassy with cilantro (or parsley, or both) chimichurri balances the richness and fattiness of sausage. It’s essential to use fresh Mexican-style chorizo, which is raw and made with ground pork, as opposed to the Spanish dry-cured or smoked variety; make sure it is link-style chorizo in natural casing. To help the sandwiches remain intact when eaten, we cut a baguette into four sections, then slice through lengthwise on just one side, creating a hinged shape reminiscent of a hot dog bun.

Huge Hit
Everyone loved it. Huge flavor, and lots of interesting flavors all at once. We put slices of avocado on drop and drizzled Sir Kensington's Chipotle Mayonnaise on top. Textures of the crispy chewy bread, fried sausage, avocado and mayo were great together!

extremely flavorful
This was a little bit of a frankenstein for me. I could not find raw Chorizo in sausage form only bulk. So I made it like a philly cheesesteak and ladeled on the ground chorizo onto of the baguette and topped with the Chimi. Wow so good, i added sliced tomato and to my surprise the mayo was great too. This puts a philly cheesesteak to shame with flavor.

Choripan
My turn, make a chimichurri mayonnaise by mixing some chimi and mayo, some iceberg lettuce and some slices of tomatoes. Buen provecho!

Very good!
Bursting with flavor. Next time I will use a softer French bread loaf instead of a chewy baguette, and add both tomato slices and avocado.
