For this pantry-friendly dinner, we throw together a simple homemade chili crisp by sizzling sliced garlic and shallots in oil, then adding pepper flakes and paprika. As for the noodles, dried lo mein or udon or non-instant ramen—even spaghetti—works beautifully. Top each bowlful of noodles with a crispy-edged fried egg.

Tip

Don’t be shy about browning the garlic and shallots. Allow the aromatics to develop rich color for deeper, savory flavor.

Ingredients

  • 12

ounces dried Asian wheat noodles (see headnote)

  • ¼

cup grapeseed or other neutral oil

Very much enjoyed it.
Interesting combination of flavors, it's a pallet for additional ingredients. Quick and easy, great for a weeknight.

Excellent peanut noodle recipe
Being a huge fan of anything involving noodles, peanut butter and soy sauce, I saved this recipe as soon as I saw it. Finally made it last night and it was delicious. One of the best peanut noodle recipes I've made and I've made several over the years. Used a Japanese crunchy chili oil instead of making the recipe version and it worked very well. The method for making the sauce, adding bok choy (also added raw, matchstick cut kohlrabi) and cooking over low heat is perfect. We found it hard to stop eating this. It's so good! Another great success from the folks at Milk Street. Thank you.

Quick, delicious, SPICY
I made this last night and it was sooo good. But I halved the recipe. . . only I forgot to only use half the chili crisp, in which I'd used very spicy thai chili flakes. Suffice to say, it was SPICY. Next time, I'll definitely cut back on the pepper flakes!

Now a staple at my house
I am amazed at how easy and flexible this recipe is. You can see by other user comments how they modified it to their liking. It's easily scalable too - I made it once for myself, then for 2, then for 4! Just eye-gauge it and it'll work out fine. Whipped it up with eggs for more proteins, toned down the pepper flakes for those light-hearted folks, using sriracha in my plate. Great results every time.

A household hit!
This recipe was a hit tonight. Easy to pull together and so full of flavor. This might be #1 from the past year of Milk Street.
