Family-friendly chicken fajitas inspired this easy dinner on a baking sheet. We add the ingredients in stages to ensure each cooks perfectly. First, we cook earthy poblano chilies and onions until tender. Then sweet-tart tomatoes join the mix, followed by boneless chicken parts, which need only a quick-roast to cook through. Tangy tomatillos can be substituted for tomatoes, bringing more bright acidity. For a low-effort taco night, serve with warm tortillas and an array of condiments.

Fantastic with a little punch up
This was absolutely fantastic with a little punch up. When I made the oil and spice mixture I found that it was too solid to rub on many of the opinions and peppers. So I dedicated it almost exclusively to the chicken and added chili powder, cayenne, and chipotle powder straight up to the onions and peppers when they were on the tray. I lightly doused them in olive oil then mixed them altogether. The chicken breasts also did not finish in 20 min so I removed the peppers and onions and tomatoes at that point and let the chicken finish on broil on the bottom rack for 7 minutes. After that the chicken was incredibly flavorful, tender, and juicy and the accompaniments were wonderfully spiced. Added a little lime to each taco. Highly recommend for a Tuesday night!

Chicken fajita traybske
Easy and delicious. A favorite! Works great as fajitas with flour tortillas and fixin’s.

Made this as prescribed by the recipe. After finishing the bake, I removed the chicken from the pan and thinly sliced it, then set aside under a foil tent. Placed all of the veggies and liquid in a blender. Blended until well combined and smooth. Mixed some of the resulting veggie mixture with the chicken. Served the chicken and veggie mixture over rice with cilantro, cheese, and salsa. Fantastic!!

Was ok.
I love traybake recipes! I was excited about making this recipe because it was the first time using tomatillos. However the flavor wasn't really there. I had to use chili powder because I ran out of cayenne pepper. I will make again only next time I'll add in some more flavors.
