For this easy, one-pan meal, we took a cue from chicken Vesuvio, an Italian-American classic that combines chicken and potatoes with lots of garlic, lemon and oregano. The dish typically is a saucy stovetop braise, but we’ve turned it into a traybake by roasting everything together in the oven. The high heat helps the chicken brown, leaving concentrated bits of flavor stuck to the pan. Those tasty bits are combined with lemon juice, mashed garlic and parsley to make a simple and delicious pan sauce.

Delicious and so easy!!!
This is a keeper! I loved that it was easy to prep and not long to cook. My family loved the way it tasted and since it was such a fast and delicious dinner it will be in my regular rotation! And made with ingredients we normally have in our house!

Soooo good
Did this tonight, but did add more veg for roasting. It was wonderful, and so easy. The higher temperature got dinner on the table faster. But I did add lemon juice to the oil, oregano mix.

Easy and delicious!
This is definitely going in our weeknight line up because it’s so easy to preps and it’s delicious. In the future, I’ll probably leave out the fresh parsley if we don’t have any in the house because the sauce is still great without it.
