If you’re used to draining canned beans before use, take note that in this 30-minute skillet dish, we use the liquid from one can for braising the greens. Either cannellini or great northern beans work, and mashing a small portion at the end of cooking creates a satisfying creaminess. We like the funkiness of pecorino Romano against the mild beans and minerally greens, but Parmesan is delicious, too. Serve as a vegetarian main with hunks of warm, crusty bread or offer it as a side to roasted chicken.

Easy vegetarian dinner
This was quick to make, with stemming and chopping the kale the most time consuming part. I used garlic powder to save on prepping cloves. I initially made it to be a side, but we decided to skip the meat main course and serve this over slices of rustic Italian bread. It did need lots of salt and pepper to give it some zip. I’ll be doing this again when going for a healthy, quick dinner.

Weeknight All-Star
Bumping this up an extra star because it IS easy, but it also has beans and greens and tastes good. What more do you want after a workday?!

Simple But Enjoyable
Enjoyed this one quite a bit. Feel like it could potentially be developed a bit more but using the bean liquid and squishing the beans really helped adding flavor and texture

Quick, but ho-hum
This needed something to make it a dish I would repeat. I have a similar, slightly more complex but much better dish in my repertoire, so I probably won't try to play around with it to make it better.
