Calabrian-Style Onion Soup with Cheese Toasts
This soup was inspired by licurdia, a Calabrian staple starring the region’s sweet, shallot-shaped Tropea onions. We found that typical American sweet onions, like Vidalia, were too one-note, but a combination of sharp red onions and milder yellow worked well. As the onions cook down, a fond forms on the bottom of the pot. This gives the broth color and flavor, so allow it to take on a deep, rich caramelization. Like French onion soup, this Italian iteration likes cheesy bread. Tangy Caciocavallo cheese from Southern Italy is ideal. If you can’t find it, aged provolone or smoked mozzarella are excellent, too.

Servings
Don’t forget to cover the pot when cooking the onions. This traps moisture to prevent scorching even though the burner is set at medium-high. The moisture does eventually cook off, so it is important to stir more once the onions begin to color.

01In a large pot over medium-high, combine the oil and pancetta. Cook, stirring, until golden brown, 4 to 5 minutes. Stir in all of the onions and ½ teaspoon salt. Cover and cook, stirring only occasionally at the start, then more often once browning begins, until deep browning has formed on the bottom and the onions are softened and sticky, 30 to 35 minutes.
